ANALISIS MANAJEMEN RISIKO OPERASIONAL PADA UMKM KEBAB “FARDIL” CABANG DINOYO

"Fardil" Kebab MSMEs are micro businesses in the culinary sector that face risk management challenges to support their sustainability and growth. Risk management is necessary to identify, analyze, and deal with potential threats. This study aims to analyze the risk management applied by using a risk matrix to map the possibilities and impacts of each risk, thereby supporting more systematic mitigation. This study identifies operational risks, including internal, HR, and system aspects, through descriptive qualitative methods in the form of observations and interviews. The results show only one high-level risk, which is the depletion of raw materials. With a risk matrix, business owners can prioritize risk management and develop more effective evaluation strategies. This research provides insight into the importance of risk management in supporting the competitiveness of culinary MSMEs in Indonesia.
